Mayumi Nishimura spent twenty years working in the field of  macrobiotics at the Kushi Institute in Massachusetts. Diminutive in  appearance yet overflowing with vitality and charm, Mayumi certainly  seems to practice what she preaches. She initially became interested in  macrobiotics a couple of decades ago while living in Japan, and was personal chef to Madonna. Here is a glimpse of her art.
